It feels as if this former coffee plantation house has been dropped right into a tropical forest. At the foot of Colima’s Volcan de Fuego, it’s tempting to sit by the enormous swimming pool and stare at the active volcano all day. But that would be to miss out on the rest of the 5,000-acre working ranch – explorable on horseback or foot. Everything on the menu is sourced from the hotel grounds – milk, for example, from the resident cows who feast on corn and coconuts – and produce and provisions including citrus, cheeses, and avocado. Inside, the bedrooms are a Mayan reminder you’re in Mexico with terracotta tiles, handmade wool carpets and tasteful splashes of colour celebrating local design. One to spend a full week at, it deserves your full attention.
