Galopina isn’t really a hotel, it’s a home. Deep in the Yucatán jungle, this five-room guesthouse is the vision of husband-and-wide duo Elisa and Guillaume Galopine who after spending time in France settled on Mexico for their project. Each room is pared back and earthy, with large terraces for evening reading and small details that nod to the local artisans who made them. Time here is quiet and spent slowly, whether at breakfast in the morning light or with a margarita by the pool in the evening. While the idea is to stay put, it’s worth venturing out too so ask the owners to map out exploring nearby cenotes and haciendas. Take note, this is the type of stay to come with a loved one, it’s not totally family-friendly.
