Opening under the fireworks on New Year's Eve 1918, El Encanto has hosted Santa Barbara's elite, including Clark Gable, Hedy Lamarr and Carole Lombard. There are great Pacific Ocean views and curated art, and you'll also see butterflies in the lobby thanks to their migration route. The estate is sprawling and totally private, close to LA but not too close, and has '50s Californian meets Spanish colonial interiors – oh so very sophisticated. The seafood and wine are particularly good, plus the cheese is made with Belmond Residential cow's milk (yes, you read that right). There's a very West Coast take on wellness too, with infrared sound bath meditations and chakra-balancing treatments in the spa. Facials are by Linda Ross, and the zero-edge pool is pretty LA-iconic. There's always something happening at this hip spot, well, Belmond are behind it after all.
